Both are naturally difficult to digest because human enzymes cannot completely cleave their specific peptide bonds. What does this mean? 🔹 Stays longer in the gut

→ creates gas, bloating and a feeling of heaviness. 🔹 Gliadin activates zonulin
→ increases the permeability of the epithelium
→ allows contact between undigested peptides and the immune system

Modern varieties are selected to have:
• higher gluten content
• higher proportion of the most reactive gliadin fractions
• longer and more difficult to break down peptides This makes them significantly more burdensome for digestion and more antigenic for the mucous membrane.
