Real Cheese Has Four Ingredients. Everything Else Is a Product.
Real cheese is not simply food. It is the result of fermentation, time and natural biological processes.
Thousands of years ago, cheese was not created to remain on a supermarket shelf for months. It was a way to preserve one of the most valuable and perishable foods available: milk.
Only four basic ingredients were needed:
- milk;
- starter culture;
- rennet;
- salt.
Nature did the rest.
Microorganisms, enzymes and time transformed milk into one of the most nutrient-rich fermented foods known to humankind.
Today, the picture often looks very different.
Many of the foods we call “cheese” are industrially constructed products. They are designed to be cheaper, more consistent in taste and appearance, and to have a longer shelf life.
The more technological processes involved in production, the further the final product may move away from the original idea of the food.
This is not only about taste. It is also about the biological information that food sends to the body.

Our model always begins with one fundamental question:
What information is the body receiving?
Every food sends a signal. Whether that signal supports recovery or increases the burden on the system depends on more than calories.
It also depends on how much of the food’s natural structure remains after processing.
Traditionally fermented cheese carries information that the human body has recognised for thousands of years.
Products made through numerous technological processes and containing thickeners, emulsifiers, colourings and flavourings send a different signal. The body must still identify, process and eliminate what it does not need.
When Does Cheese Stop Being Cheese?
Today, we can find products that look like cheese, melt like cheese and taste like cheese, yet contain numerous additional ingredients.
Pre-grated cheese, for example, often contains starch or cellulose to prevent the pieces from sticking together.
Processed cheese may contain emulsifying salts that alter the natural structure of milk proteins and create its characteristic smooth, uniform texture.
Powdered “cheese” used in various packaged foods often contains flavourings, flavour enhancers, colourings and only a relatively small amount of actual dairy product.
All of this may be legally permitted. However, the fact that an ingredient is legal does not automatically mean that it is optimal for human physiology or necessary in the daily diet.
The Main Problem Is Not One Additive, but the Accumulation
This is one of the central ideas we observe in our daily practice.
A single emulsifier is unlikely to change a person’s health on its own. The same applies to one colouring or one serving of ultra-processed food.
The body, however, does not live for only one day, nor does it process only one product.
Every day, it receives information from breakfast, lunch, dinner, desserts, drinks, supplements and medicines. These are joined by cosmetics, environmental pollutants and many other substances with which we come into contact.
Each of these signals requires processing.
They pass through the intestines, liver, immune system and the body’s natural elimination mechanisms.
This is why, in our practice, we rarely search for a single “culprit.” It is more important to assess the total burden placed on the system and the body’s ability to manage it.
Real Cheese Is a Living Food
High-quality traditional cheese has a short and understandable list of ingredients: milk, starter culture, rennet and salt.
During fermentation, microorganisms and enzymes naturally break down part of the milk sugar and proteins. Beneficial bacteria, bioactive peptides and various compounds are formed, including vitamin K2, which participates in processes related to the proper distribution of calcium in the body.
Well-matured cheeses are often tolerated better than some fresh dairy products. This is because fermentation and time have already completed part of the work required to break down the food.
This does not automatically make every cheese suitable for every person, but it shows why the traditional production method matters.
Not Everyone Responds to Dairy Products in the Same Way
This is an important clarification.
People often say:
“I am intolerant to dairy products.”
In our practice, however, we sometimes see a more complex picture.
After improvements in digestion, stomach acidity, pancreatic function and the condition of the intestinal barrier, some people begin to tolerate high-quality fermented dairy products much better.
This does not mean that dairy foods are appropriate for everyone. It means that the problem is sometimes not found only in the food itself.
It may also be related to the environment responsible for digesting and absorbing it.
The same high-quality cheese may be an excellent choice for one person and unsuitable for another who has severely impaired digestion.
This is why, at Agaia, we first assess the condition of the system before identifying the food as the main problem.
A1 or A2 Beta-Casein?
In recent years, increasing attention has been paid to the different forms of the milk protein casein.
Most modern dairy cattle breeds mainly produce A1 beta-casein. During digestion, it may produce a peptide called BCM-7, or beta-casomorphin-7, which has been discussed in relation to digestive discomfort in some people.
Goat’s and sheep’s milk, as well as milk from certain older cattle breeds, mainly contain A2 beta-casein and are often reported to be better tolerated.
Scientific evidence has not yet provided a definitive answer that applies to everyone. In clinical practice, however, some patients do report better tolerance of dairy products containing mainly A2 beta-casein.
Individual response remains important here as well.
How Should We Choose Cheese?
At Agaia, we do not search for the “perfect” food. We look for food with as little unnecessary intervention as possible.
When choosing cheese, pay attention to:
- a short and understandable list of ingredients;
- traditional production methods;
- sufficient maturation time;
- minimal technological processing;
- the origin of the milk;
- whether the animals may have been pasture-raised;
- the absence of unnecessary colourings, thickeners and flavourings.
The closer food remains to its natural form, the less additional work is left for the body.
This does not mean that every form of technological processing is harmful. It means that we should distinguish between processing that preserves or improves food and processing that mainly conceals poor-quality ingredients or imitates characteristics the product does not naturally possess.
Our Conclusion
We are not against cheese, and we are not against technology.
We are against the idea that food should gradually lose its biology and become nothing more than an industrially constructed product.
Real food is not defined by the advertising claims on the front of the package. It is defined by what the product actually contains.
The shorter and more understandable the list of ingredients, and the closer the food remains to the way it has traditionally been made, the easier it may be for the body to recognise, process and use it.
Ultimately, health is rarely changed by one individual food. It is built through the thousands of small choices we make every day.
When food contains more biology and less unnecessary industrial intervention, the body generally has a better foundation on which to function.
